**DISCLAIMER** I’m a much better photographer than i am baker.
I’m no Mary Berry, i’ll hold my hands up to that. I attempted to make Banana Bread for the first time and i know you’re probably thinking easy peasy, well not for me. I’m good at following recipes but i often get distracted and miss out ingredients i.e the sugar – yup… complete fail. My way out of that one was to drizzle the whole thing in chocolate and in all fairness the end result didn’t taste too bad, especially guzzled down with a cup of tea. If you’re better at following recipes than me and also have yet to whip up some Banana Bread then have a peek at a simple recipe below:
Preheat the oven to gas mark 3, grease a deep loaf tin (mine was far too shallow, oh hindsight). Mash the banana into a mixing bowl and add all the other ingredients apart from the choc chips, beat everything together until smooth and then add the chips at the very end. Spoon the mixture into the tin and bake for 45 minutes or until golden brown. Leave for 10 minutes to cool if you can resist.
Although i won’t be entering into Great British Bake Off any time soon and after a few minor hiccups and the missing sugar, once smothered in chocolate and served with a dollop of vanilla ice cream and frozen raspberries i actually think that my dentist would forgive me for that mistake!
