If you’re already on the healthy eating bandwagon then the cauliflower pizza base will be nothing new to you. This gluten free base cuts out the carbs, favoured by the likes of Deliciously Ella and Madeleine Shaw, this revamped pizza is the most popular ‘clean eating’ craze this year. The base itself is super easy to make and consists of only four ingredients.
Simply blitz up the cauliflower until fine, combine the rest of the ingredients and mix together until you have a sitcky dough like consistency and then spoon onto grease-proof paper and smooth out into a circle shape, i managed to get two bases out of the above quantities. A basic tomato sauce is a really easy to whip up (you won’t burn down the kitchen with this one) just sauté a white onion in a sauce pan, cook until soft and then add a can of chopped tomatoes with a pinch of dried rosemary and salt, just leave for ten minutes and you’re done. That is all the prep and cooking you need to know, this is your go to base and once you get the knack of that the toppings are completely up to you. This is where you can create a pizza to your own taste and pick any toppings that you like. I actually tried one of the combinations from Madeleine Shaw’s Get The Glow Recipe book, a simple goats cheese, spinach and pine nut combination which was really lovely! Being pescetarian i would stick to prawns and all kinds of veggie goodness but you could experiment with Italian meats such as chorizo paired with black olives and rocket, the choice is completely yours! Domino’s who?
